3- Prepare for Drying: Lay the carrot peels and strips on a clean tray. Spread them out evenly, ensuring they are not overlapping, to allow for even drying.

4- Dry in the Sun: Place the tray with the carrot peels and strips in a sunny spot. If you are in a location with intense sunlight, position the tray in a somewhat shadowy area to prevent the carrot peels and strips from burning or drying too quickly. Cover them with a fine mesh or cheesecloth to protect from insects and dust.

5- Allow to Dry: Let the carrot peels and strips dry naturally in the sun for 2-3 days or until they are completely dry and brittle.

Note: I prefer natural drying in the sun rather than using an oven because, if the temperature in the oven is not carefully controlled, the carrot peels and strips can burn or their surface may blacken. Sun drying ensures a more gentle and even dehydration process, preserving the beneficial properties of the carrots.

6- Grind to a Powder: Once fully dried, place the carrot peels and strips in a blender, coffee grinder, or food processor and grind them into a fine powder.
